News letter month of May and June 2005

Spring is coming with huge steps and we are preparing for Mothers Day. Here is a very easy biscuit cake recipe for all of you that don’t know what to bring Mother on her special day.

  • You need 5 eggs, 5 oz of sugar
  • 4 oz of all-purpose flower (best is quick mixing flower)
  • Separate the egg yolk from the egg white and beat the egg white (add a little salt to get it stiff)
  • Whip the sugar into the egg yolk with a metal whisk until everything is smooth and nice.
  • Now bring in the stiff egg white mix it up very careful.
  • Then put the flower in a strainer and mix it slowly and again careful.
  • Take a round cake tin, about 9–10 inches. Put some baking paper into it, that way the mix will not stick to the cake tin.
  • Bake it for about 20 Min at about 300 – 340 degrees depending on were you are.
  • After the cake has cooled off, you decorate it with strawberries and cream, or whatever your Mom likes the most.
  • You also can put the dough into a heart shaped form.
  • Don’t grease the sides, the dough can fall to the bottom!
  • Don’t beat the dough to long, the air will go out and the biscuit will not get fluffy!

May is also the season for asparagus, the very low calorie vegetable. If you get asparagus fresh from the field and you have to clean it, watch out that you peel it from the head to the bottom. Otherwise your vegetable will turn bitter. You can keep the asparagus wrapped in a wet towel for about 24hrs in the fridge.

My old friend Dick (www.handcraftedsilver.com) is casting silver; I have a lot of nice pieces from him. Only thing is; silver is getting dark. The other day I got a very good tip how to get silver shiny without any rubbing:

  • Poor a pound of salt into it and then put ¼ to ½ gallon of hot water onto it.
  • Put tinfoil in the bowl, then put the silver on the tin foil, you see how it cleanses itself.
  • Wash the pieces with clear water.

TIP! Remember my cooking classes at Thanksgiving Point and at Granite Peaks !

May/June is also the time to plant tomatoes. If you don’t have a garden but a balcony, don’t worry the tomato likes also to be grown in a pot. That way you will have fresh tomatoes all summer long.

It is my husbands Tom’s birthday in June and it will be the first time we celebrate this one in the United States. We enjoy being here so much. Utah is such a nice state to live in; the mountains with the wonderful nature, fishing and so many other activities are still waiting for us to be explored. We have met so many interesting people and it has been such fun teaching in Utah.

The other day we did something very European. We went to visit our friends Sheila and Roger that live in a beautiful home. There Sheila and I cooked while the husbands solved the world politics. And since we wanted to participate in the philosophy I chose a meal that would be done in a few seconds.

Chicken breast baked in blue cheese

  • Chicken breast fried nice and brown, spiced the way you like it
  • Put the chicken in a casserole and cover it with one peach half and a slice of blue cheese
  • let it bake for about 45 min at about 350 degrees.
  • Serve it with Roquefort cheese bread (Costco) and a green salad

If you want the meal larger, just add a soup and a desert to it.

Wish you all a pleasant summer and a lot of nice activities. And remember: no “store-bought” fast food, learn how to create a healthy “fast food”. The chicken takes you about 20 minutes of preparation, the omelet recipe from last month about 10 minutes!
And I have lots of good meals that you can prepare in less then 15 minutes.

The most important thing that I always teach my students is to keep the kitchen very organized. If you have everything you need within a hand’s reach, then you will love to cook and bake like I do. No week passes in which I don’t bake about 2-3 loaves of bread. If I would not have my baking machine I would be lost! Next month I shall give you my best recipes for good bread baked in the machine.

In June I have a class at Skyland High School in SLC Utah. There I shall teach you a very outstanding menu created by my favorite cook Jamie Oliver. Hurry up and sign up, so you all will be a Jamie Oliver Fan. He is the only English man I would allow to cook in my kitchen.

Hope to see you in my next class. Tell me about your experience with the recipes, how you liked the food and what you changed to make it taste better for you.

Love to be your chef!
Evelyn
