I hope you all have had a wonderful holiday
season, lots of guest and not too much stress.
In my family we had the traditional “Holy night”
on the 24th of December, and x-mas day started with a wonderful concert
of the Tabernacle Choir in Salt Lake City.
One thing that I cannot change: we always eat too
much of that good food that I had prepared days before.
On the 24th we had a vegetable torta, the recipe I found at Americans
test kitchen. Lot’s of preparation, but it was worth all the work. On
the 24th I served German rouladen with red cabbage.
Now it is time to calm down and start on a diet to get off all those
extra pound’s on hips and waists. To help you and me on how to do it I
shall share a recipe with you that has only a few calories, and tastes
good on top of it. The fastest way for me to loose weight is to eat 70%
living food (salad, vegetables, and fruits).
Here you will find a recipe with low calories and still very tasty.
French
Ratatouille (vegetarian)
- Butter flavored vegetable cooking spray
- ½ teaspoon olive oil
- ½ cup chopped onion
- ½ cup green pepper strips
- 1 ½ teaspoon minced garlic
- 1 ½cups peeled, cubed eggplant
- 1 cup peeled, seeded, and chopped tomato
- ½ cup sliced zucchini
- 1 teaspoon salt
- ¼ teaspoon pepper
- 2 teaspoons chopped fresh parsley
Coat a medium nonstick skillet with cooking spray;
add oil. Place over medium heat until hot. Add onion, green pepper, and
garlic; sauté 2 minutes. Stir in eggplant and next 5 ingredients. Cover
and cook 5 minutes or until tender, stirring twice. Sprinkle with
parsley.
Makes two servings, Calories 79 per serving
The French would eat it with Baguette, but this you will have to post
pone ‘till after your diet.
